Sushi Sawamura | Grand Green Osaka Located in Grand Green Osaka, Sushi Sawamura blends excitement with a relaxed atmosphere. The entrance features a grand noren and a tsubo-niwa garden with art bonsai. Inside, deep shadows heighten senses beyond sight—scent, sound, and taste. The space consists of "breathing materials" like earth, wood, and stone. The "Floating Hinoki" counter, appearing to drift in mid-air, serves as the heart of the experience, highlighting the wood’s natural fragrance. By stripping away the excess, we created a refined space that resonates with guests.

鮨澤むらは、グラングリーン大阪の商業施設内にできた鮨屋。商業施設ならではの諸条件をクリアしながら、設計をスタートした。来店してもらえるお客様の高揚感を高くしながら、気を張らず食事を楽しんでほしい、オーナーの意向を具現化出来たデザインができた。エントランスには、大きな暖簾、日本の建具のディティールを組み入れた腰壁、そしてグラングリーンの景観と調和するよう、アート盆栽などのグリーンを用いた「坪庭」を配置。店内は、あえて陰影を深くすることで、視覚以外の感覚（香り、音、味）を感じられる空間としたまた、土、木、鉄、石といった「呼吸する素材」のみで構成。素材が持つ圧倒的な存在感を選定したカウンターは、「浮遊する桧」足元を照明も入れず、ブラックアウトさせることで、重厚な一枚板が宙に浮いているような幻想的な演出したやはり、鮨屋の醍醐味はカウンターであり、桧の香りも大切な空間の一種であり、白木の大切さを感じてほしい意図も、汲み取ってほしい部分であるデザインの余分なものを削ぎ落とす作業に苦労したが、沢山の評価を頂き、改めて良いお店になったと感じています
